ROCKFORD — The Norwegian opened with a bang on Saturday.
Owner Emily Hurd already is looking for more employees because so many customers swarmed her 1402 N. Main St. restaurant.
She’s also keeping her doors shut on Monday.
“I can see we are clearly going to be busy for a while,” she said. “Now that we see we’re going to be slammed, we need a day to prep.”
Hurd and her husband, Mark Christensen, are Auburn High School graduates who purchased the building three years ago.
It had asbestos, a collapsed roof and severe water damage. The community helped them raise about $100,000 and they were able to finally open this past week.
For the record, her husband is the one with the Norwegian ancestry. She is of Swedish descent.
Hurd is serving “typical brunch fare with a Nordic twist.” She is humble about why her restaurant seems to be doing well. She said it’s all about location, location, location.
“It doesn’t matter what we call ourselves and what food we’re serving,” Hurd said. “The community needs this strip to be back up and running. That’s why we’re doing well. It has nothing to do with us or the service we’re providing.”
